Sweet potato & sweetcorn chowder with crispy meatless mince & roasted cauliflower π₯Ίπ΅π and a side of @bionaorganic golden linseed rye (the BEST π€©)
I am noooot a soup person at all (hence the abscence of it on my feed) but @marcus_dell requested & I delivered π and I must admit it was really reaaallly peng π chowder is the best as itβs so much thicker than soup and is so comforting π₯°
π΅ sweet potato & sweetcorn chowder π΅ with crispy mince π± serves 2
– 250g sweetcorn
– 1 medium/ large sweet potato, peeled and cubed
– 2 garlic cloves
– 1 small onion, chopped
– 300ml almond milk
– 250ml veg stock
– 1 bell pepper, chopped
– simply fry the onion and garlic in some oil till soft then add in the sweet potato chunks with 100ml water, salt and pepper, pop a lid on and simmer for 4 mins
– add in alll the other ingredients and simmer for 10 mins, then transfer all the liquid and 2/3 of the veg to a blender and blitz
– return the sauce to the pan and stir with the leftover veg chunks, season with salt and pepper and serve π₯°
FOR THE CRISPY MINCE: heat a gulg of oil in a pan and throw in 100g plant based mince (ideally @meatlessfarm) with 1/2tsp paprika, 1/2tsp cinnamon and 1/2tsp sugar till nice and crispy π€€π€€
