Sweet potato pumpkin spice muffins. Chocolate cream frosting.

Fall is here and that means everything with fall flavors. These were so decadent and dense. 🍁

Ingredients

Cupcakes

2 small steamed sweet potatoes with skins removed. Can also use pumpkin purée. Save the skin, and put in something like oatmeal)
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tbs chia seeds
22 deglet dates
1.25 cups almond milk
1 tsp vanilla
Pinch of salt
2 cups gluten free oat flour
1 cup almond flour
2 tsp lemon juice
Optional add chopped pecans

Blend all wet ingredients and add to dry ingredients. Grease cupcake tray and place batter. Bake 40-45 minutes at 350F and let cool before frosting.

Chocolate cream

1 cup boiled cashews drained
1 tsp vanilla
Pinch of salt
2 tbs cacao powder
1 cup almond milk
13 deglet dates

Blend until creamy.
