SWEET POTATO PUMPKIN SOUP ⠀⠀

Ingredients:⠀⠀
⠀⠀
1 medium sweet potato, peeled and diced ⠀⠀
2 cups pumpkin, roughly chopped⠀⠀
1 cup unsweetened almond milk ⠀⠀
1 cup veggie broth ⠀⠀
3 garlic cloves, minced⠀⠀
1 tsp onion powder ⠀⠀
1 tsp chilli powder ⠀⠀
1 tsp dried basil ⠀⠀
⠀⠀
Instructions:⠀⠀
⠀⠀
Firstly, steam the sweet potatoes and pumpkin – add water to medium-sized pot, bring it to a boil and add a steaming basket. Place the potatoes and pumpkin in the basket, cover and steam for a total of 15-20 minutes, until soft. When it’s all cooked and soft, remove and cool completely.⠀⠀⠀⠀

Place the sweet potatoes, pumpkin and the almond milk in a food processor and blend until smooth. Now add the garlic, onion powder, chilli powder and dried basil and blend for another 10 seconds.⠀⠀

Transfer the mixture into a medium-sized pot, add the broth and let it cook for about 5-7 minutes on medium heat.⠀⠀
