Sweet Potato Poke Bowl by @naturallyzuzu 🥬🥒🥑🍠 It’s light yet packed with nutrients and umami flavors 😋
One baked medium sweet potato sliced it in cubes. Marinated in a spicy miso ginger marinade for 10 min and put the poke bowl together with the rest of the ingredients from my fridge. All you need to assemble this dish together is some left over rice (use cauliflower rice for #keto or #grainfree version), fresh carrots, avocados, cucumbers, green peas, few fresh jalapeño slices, sesame seeds and some pea sprouts.
Here is a recipe for the marinade.
Makes about 1/2 cup marinade.
1/2 cup Tamari or light soy sauce
1 tsp of grated fresh ginger
1 tsp or more of sambal oelek chili sauce
1 tsp of miso
1 tsp of maple syrup
1 tsp sesame oil
Few sprinkles of sesame seeds
Mix everything until well combined. Pour it over bake
