sweet potato mac n cheese got me 😁😁 cheeeezin on this tuesday morn!! this was so fun to make and SO yummy! it continues to amaze me how easily we can sub vegetables into recipes to still create our favorite foods in more plant-based ways. I absolutely love it πŸ’š

Sweet Potato Mac & Cheese:
1 large sweet potato, cooked & mashed
1 cup almond milk + more to thin
1/2 cup shredded mozzarella (sub dairy free)
2 tbsp nutritional yeast
2 tbsp parmesan (sub dairy free or more nutritional yeast)
2 cloves garlic
1/2 tsp paprika
1/4 tsp pepper
1/4 tsp salt

How I made it: cook 8 oz pasta (I used @barilla chickpea rotini) according to package. Mix some steamed broccoli with the cooked pasta (optional but recommended!) and set aside. Combine above ingredients in blender and blend til smooth. Continue adding almond milk until you reach desired consistency. Pour sauce into a pan and heat on stove, stirring until heated through. Pour over pasta and broccoli (you may have more sauce than you need so add in small increments) stir until well combined and voila! ✨

the best thing about these blender sauce recipes is that you can play around with the ratios! this is my best estimate of what I threw in my blender, but feel free to personalize it to your taste! and tag me if you try it cause I would love to see your creations 🀩
