Sweet Potato Cheesy Shells with Apple Cider Onions
There’s really nothing like a cheesy pasta, right? These are topped with apple cider caramelised onions for that added burst of flavour! 😍 Get the recipe:
👉 Sweet Potato Cheesy Shells with Apple Cider Onions
1 medium sweet potato, steamed* (about 1.5 cups puréed sweet potato)
1/2 block extra firm tofu**
1/2 cup full fat coconut milk
1/2 cup nutritional yeast
1 tbsp miso paste
1 tsp onion and garlic powder each
1 tsp salt or to taste
Juice of 1 lemon
1.5 – 2 cups of pasta water
1 box of pasta shells
Steam the sweet potato and cook pasta shells in saltwater. Don‘t forget to reserve 2 cups of pasta water before draining.
Add all ingredients for the sauce to a high powered blender and blend until smooth. Start with 1 cup of pasta water and increase by another half or full cup, depending on your preferences for the thickness of the sauce.
Mix cheese sauce with the hot pasta, top with caramelized onions and enjoy! 💛

* I like steaming the whole sweet potato in an instant pot. Depending on its size, I cook it for ~ 30 minutes, High pressure, Manual setting on the steam rack.
