Sweet and sour orange crispy tofu & garlic sesame bok choy over white sticky rice ?? .

Does anyone else love Chinese takeout as much as I do? I have been craaavvingg it lately so I decided to make a trip to my local Asian market @99ranchmarket to pick up a ton of fun ingredients I’ve wanted to try. .
.
The tofu was perfectly crispy and sticky from the sauce. I loved it so much I had to share the recipe with you!! ???
Here it is! ?
Ingredients:
Firm tofu
1/2 cup corn starch
Salt
Pepper
1 Tbsp sesame oil
3 Tbsp vegetable oil
1 clove garlic
1 inch ginger
2 green onions
1/4 cup whole dry chilies
Tofu sauce :
1/2 an orange, juiced (about 3 Tbsp)
1 Tbsp rice vinegar
1/2 Tbsp mirin or sugar
1 Tbsp sesame oil
2 Tbsp ketchup
1 Tbsp soy sauce
1/2 Tbsp chili flakes
4 Tbsp water
1/2 Tbsp corn starch

Begin by making tofu sauce:
Im a small bowl whisk together water and cornstarch, set aside.
In another bowl, mix together all sauce ingredients and then add in water/corn starch slurry.
Then slice your garlic, ginger & green onions. Place the whites of the onions in a bowl with the garlic and ginger, keep the green parts separate, and set this all aside for later.
Prep to fry your tofu.
Remove tofu from water and cut into 1 inch squares. Mix corn starch with salt and pepper in a wide bowl.
Begin heating a large pan on medium low heat. Add sesame oil & vegetable oil to the pan.
While that heats, add tofu pieces into corn starch mixture and toss to coat completely. Do this in small batches so the starch isn’t over crowded. Gently shake excess starch off tofu. Add tofu into warmed pan and cook until crispy. About 10 minutes.
After tofu is crispy, remove onto towel lined plate and set aside.
To the same pan, add garlic, ginger and white parts of the onion. Add in 1/4 cup whole dried chilies.
Cook this for a couple minutes until fragrant. Add in sauce, bring to a simmer until thickened. Once thickened, toss in your tofu. Stir to coat completely and serve over rice. Top with green onions and sesame seeds.
