Sweet and Sour Cashew Tofu! Sticky, tangy & definitely delicious!🤤 ​

​Recipe: 

​Ingredients: (Serves 2 – 3) 
​~ 1 packet of firm tofu (450g)
~ 1 red capsicum
~ Half pineapple
~ 4 stems brocolili
~ 1/4 cup unsalted roasted cashew
~ 1/4 cup corn starch
~ S & P to season
~ Vegetable oil for frying

​The Sweet and Sour Sauce: 
​~ 2 tbsp tomato paste
~ 2 tbsp maple syrup
~ 2 tbsp light soy sauce
~ 1 juice of lemon
~ 4 tbsp water

​Method:
​~ Pat tofu dry, cut into cubes, then coat with corn starch
~ In a non-stick frying pan, fry tofu with oil until golden (set aside)
~ While tofu is cooking, cut pineapple, capsicum, and broccolini
~ Return to the same frying pan, sauté pineapple, capsicum and broccoli for 2-3 mins
~ Add in cashews & tofu, continue sautéing
~ In a bowl, whisk all the sauce ingredients together and then pour into the pan
~ Toss everything together by moving and titling the pan
~ Cook for 5-7 mins until sauce well caramelised and combine
~ Serve with rice & enjoy!
