Sweet Air Fried Tofu with Bell Pepper

Ingredients:
200g extra firm tofu
3 tbsp chilli oil
2-3 red bell peppers (thinly sliced)
1 medium onion (roughly chopped)
Salt
Black pepper
2 tsp black vinegar
3 tbsp coconut syrup
1 1/2 tbsp pumpkin seeds
1 1/2 tbsp sunflower seeds
Sesame seeds

Method:
1. Cut the tofu into bite-sized pieces. Fry it in the air fryer  for 20 minutes at 190 °C.
2. Heat the chilli oil on a pan.
3. Add the bell peppers, onion, pinch of salt and pepper. Fry it for 2-3 minutes on medium heat until the onions become soft and translucent.
4. Add the black vinegar. Give it a mix for 1 minute.
5. Add the air fried tofu. Give it a mix for 1 minute.
6. Add the coconut syrup. Give it a mix and fry on low heat for 2 minutes or until the tofu is coated well with the sauce.
7. Add the pumpkin and sunflower seeds. Give it a mix for 1-2 minutes.
8. Garnish with some sesame seeds.
