SUPER SMOOTH VEGAN WHITE PASTA SAUSE WITH ROASTED BROCCOLI + CAULIFLOWER? ⁠

Serves 4- 6⁠
1 cup cashew, soaked for 2 hrs in hot water + drained⁠
2 tbsp EVOO⁠
2 shallots, diced⁠
3 garlic cloves, minced⁠
1 tbsp fresh thyme leaves⁠
1 tin butter beans or cannellini beans
1 tbsp sweet white miso
3 tbsp nutritional yeast
1/4 cup vegetable stock⁠
6 tbsp unsweetened almond milk
Salt and pepper to taste ⁠
12 oz yellow split pea pasta
Water to thin ⁠
3 oz walnuts, toasted⁠
2 tbsp parsley, chopped⁠

VEGGIES⁠
4 Cup cauliflower florets⁠
1.5 Cup broccoli florets⁠
2 – 3 tbsp toasted sesame oil or olive oil ⁠
Pink himalayan salt to taste ⁠

METHOD⁠
Preheat the oven to 400 degrees

Add veggies to a roasting tin with sesame / olive oil and salt. Roast for 20 – 25 mins until slightly crispy, adding walnuts for last 6 minutes.⁠

Meanwhile, heat 2 tbsp olive oil in a pan. Add shallots and fry for 3 mins till soft. Add garlic and thyme for 1 min. Allow to cool. ⁠

Add drained cashews, beans, onion mix, miso, nutritional yeast, seasoning, stock and almond milk and blitz for at least 1 minute until super smooth. ⁠

Cook pasta as per instructions. Drain keeping a little pasta water to one side.⁠

Heat sauce in a pan. Add pasta plus up to 6 tbsp pasta water and then normal water or more almond milk until to desired thinness. Adjust seasoning + miso to taste. ⁠

Mix through roasted veggies and top with walnuts and fresh parsley.
