Super quick and pesto stir fry with rice(vegan)

*************INGREDIENTS ***************
—-‐—————–For 2 serves————————-
2 serves rice

200g firm tofu, dried with paper towels

2 tbsp cornstarch

1 bok choy, roughly chopped

1/2 zucchini, diced

Optional chili flakes sesame seeds,

PESTO (process in blender)

1 tsp fresh ginger, finely minced

2 cloves garlic, finely minced

1 tsp lemongrass paste (optional)

1 handful mixed herbs (I used basil, parsley, coriander, chives)

3 tbsp roasted almonds

2 tbsp nutritional yeast

*************INSTUCTION***************

Cook rice if you have no leftovers.

Using your fingers, pull away chunks of the tofu. Place the tofu pieces in a container along with cornstarch, close container and shake to evenly coat.

Heat your pan and fry the tofu pieces until each side becomes golden-brown and crispy. Set aside.

Prepare pesto (if you haven’t), store in a glas for multiple use.

Heat a clean pan/ wok and fry the chopped vegetables with a dash of oil/water, add pesto and tofu, stir for a around 3- 4 minutes. You might need to add another dash of water. Salt and pepper to taste.

Serve with rice.
