Super easy refreshing salad (vegan)
————————RECIPE——————————
INGREDIENTS: (1serve)
1/3 can chickpeas (+spices your choice, I just a Mexican blend + dukkah spice mix)
3-4 falafels
1/4 cucumber
Handful mixed salad
Dressing: (shake in a jar)
1 cup left over pickled gurken water
2 tbsp apple cider vinegar
1 tbsp coconut yoghurt
1 tsp fresh ginger, minced
1 tsp fresh garlic, minced
1 teaspoon sesame oil
1 tbsp mustard
INSTRUCTION:
Drain chickpeas, rinse and place in a bowl, add spices of your choice and a dash of oil, stir to cover. Preheat oven or airfryer and bake together with the falafel for 10-15 minutes.
Wash salad and dice cucumber & add to a to a large bowl and cover with dressing. Set aside.
Lastly top with the crispy chickpeas and falafel.
