🌈❄️ Sunday brunch
On this lovely snowy day I decided to make another dish from my @sundaybarnsbury book I got for Christmas from @carlamcintyre_f 💖 it’s our all time fave brunch spot in London! Had a bit of a dilemma bc was planning on making cauliflower hot cakes from the book, but Waitrose ran out of cauli 💔 not to worry tho bc I made sweetcorn fritters instead! V similar ingredients so easy to adapt 👍🏻
I got the inspo for flavour and serving ideas from the book but the recipe had eggs in so used a recipe from @veganhuggs for the batter! They also had red pepper, spring onions and coriander in, but you could use any veg you have!! Swipe for a close up of the fritters 🌽
Served these with broad bean, avo and tomato salsa (recipe from @sundaybarnsbury), balsamic sautéed onions, chilli jam, @this.uk vegan bacon and some toast.
It all went so well together and have already had requests from the rents to make this brunch again soon 🥰
