Summer Rolls with Peanut Sauce
Love making these from whatever can be found in the fridge…and for some reason I absolutely love mine with peas ??✨
Vegan & Gluten-free
Makes 6 rolls
Ingredients
6 spring roll wrappers
3 romaine lettuce leaves, cut in thirds
2 avocados, sliced
1 medium carrot, julienned
3/4 cup rice vermicelli
1/2 cup green peas
1/2 medium cucumber, julienned
Sauce
1/2 cup natural smooth peanut butter
2 tablespoons soy-free soy sauce
1 tablespoon Maine maple syrup
1 teaspoon sriracha
2-4 tablespoons warm water (for thinning)
1 teaspoon sesame seeds, for topping
Instructions
Step 1: Cook rice noddles. Cut up veggies. Have all ingredients readily available for when you start wrapping.
Step 2: In a small bowl whisk together sauce ingredients. Top with sesame seeds and set aside.
Step 3: Wet the wrap by dipping it in water for about 5 seconds (I use a pie plate with warm water). Lay wrap on a wet cutting board. Work quickly to add filling then roll it up. Dip in peanut sauce and enjoy!
