Summer lovin’ Fig Arugula Salad with vegan feta and maple balsamic vinaigrette because it’s figgin Friday!
I don’t know about you guys, but I am loving the fig season. I could eat a whole box of these nature’s candies all by myself for breakfast.
Today, I am sharing one of my favorite ways to eat figs, in the salad! I love the combination of sweet, bitter, sour and salty profiles this salad delivers. It’s like a flavor party in your mouth!
I hope you will give it a try. Here is a recipe.
Fig Arugula Salad with vegan feta and maple balsamic vinaigrette again.
Makes 4-6 servings
For the salad
2 med bags of baby arugula
6 med mission figs or combination of different figs (sliced in half)
1/3 cup roasted pecans
1/2 cup vegan feta (crumbled)
1/2 cup blackberries sliced
Assemble the salad then make the vinaigrette.
Ingredients:
1-1/2 teaspoons minced shallots
1 tsp minced garlic (optional)
1-1/2 tablespoons balsamic vinegar
1 tsp of maple syrup
1/8 teaspoon kosher salt or fine sea salt
1/8 teaspoon freshly-ground black pepper
3 tablespoons avocado oil
Make the Vinaigrette
In a small bowl, stir together shallots, garlic, 1 tablespoon vinegar, maple syrup, salt, and pepper. Slowly drizzle in avocado oil, whisking, until emulsified. Taste the dressing. If you like it to have a more tart flavor, add an additional 1 to 1-1/2 teaspoons vinegar. Season to taste with additional salt and pepper. .
