Sugar-Free Vegan Raspberry “Cheesecake”🤤. “Cheesecake” vegan à la framboise (🇨🇵⬇️ recette dans les commentaires).

🇬🇧 Ingredients & instructions:
Crust:
▪️110g of spelt flour
▪️225g of Medjool dates
▪️55g of coconut oil
▪️1 tsp of ground cinnamon
▪️1/4 tsp of salt
▪️40g of walnuts
▪️3 tbsp of plantbased milk

Middle layer:
▪️155g of Medjool dates
▪️250ml of coconut milk
▪️2 tbsp of peanut butter
▪️1/2 tsp vanilla
▪️A pinch of salt

Fruit layer:
▪️300g of raspberries
▪️150ml of coconut milk
▪️40 grams of raw cashew nuts
▪️40 grams of Medjool dates

1️⃣ Soak the raw cashew nuts in cold water for at least 4 hours.
2️⃣ Preheat the oven to 180°C and grease an 18cm round baking tin with coconut oil. Mix all the ingredients for the crust in a mixer and then spread evenly across the bottom of the baking tin.
3️⃣ Bake for around 15-20 minutes (or until golden brown).
4️⃣ Mix all the ingredients for the middle layer until smooth and pour on top of the crust. Place in the freezer for 30 minutes to set.
5️⃣ Mix the ingredients for the raspberry layer and pour on top of the middle layer. Leave to set in the freezer for a few hours and take out 10 minutes before serving.
