!Stuffed Potato Skins!
Potato is a staple in many dishes across the world. With so many ways to cook it into a delicious meal, it’s really hard to mess up(doesn’t mean you can’t!?)
Today you’ll get to have your potato mashed and crispy all in one! Loaded to your hearts content with whatever gets your tastebuds jumping!

Ingredients:
4 medium sized russet potatoes
1/2 cup of butter
1/4 cup of cream cheese
1/4 cup of soy milk(any plantbased milk)
Salt
Pepper
1/4 cup of Grapeseed Oil
Thyme
Sage
Rosemary

Directions:
1.) Preheat the oven to 400 degrees F. Scrub your potatoes down and wash them off thoroughly. In a small bowl combine the oil, thyme, sage, and rosemary. Piercing the potatoes with a folk, take your oil mixture and brush all over. Make sure each potato is covered equally. Place in oven for an hour.
2.) Take the potatoes out and cut them in half. Be careful cause they will be hot. With a spoon, scoop out all the potato goodness and place in a large bowl, be careful not to scoop too hard. You have to keep the skin intact.
Place the oven on 450 degrees F. When everything is scooped out oil each skin up evenly, sprinkle a little salt and place back in the oven for 7 minutes.
3.) In the large bowl with the potato stuffing, add in the butter, cream cheese, and milk. Mix together well and then add in salt and pepper to taste. You should have a good whipped mashed potatoes done easy.
4.) Flip over the skins and place back in the oven for 3 additional minutes. When they’re done, take out and fill with your mashed potato filling. Place back in over with a low boil until tops are lightly browned.
Take out and top with whatever floats your boat! Enjoy and let your imagination run wild!
