stuffed banana peps FTW 🍽

ingredients:
1/2 c green peas
3 med sized potatoes
1 grated carrot
1 yellow onion 🧅 chopped
3 green chilis chopped
1/4 c chopped scallions
12-15 med size banana peppers
2 cloves of garlic 🧄(chopped)
1/4 tsp black pepper
1/2 tsp himalayan pink salt
cracked red pepper to taste
1/4 tsp turmeric powder
1/2 tsp curry powder (mixture of coriander, cardamom, cloves, mustard seeds and cumin)
1 cinnamon stick
3-4 tbsp avocado 🥑 oil

first, boil your potatoes in a med size pot until they’re cooked well. then soak your banana peppers in warm water (for about 5 mins to make the skin a bit tender) then cut a line down from the stem about 3/4 of the way down to take out the seeds and set aside.

once the potatoes are done, mash them with a fork until somewhat (with some chunks) smooth. then, start a pan on med-high heat, and add in 3-4 tbsp of avo oil. add in garlic 🧄, cinnamon stick, onion and green chilis. once that starts to sauté, add in grated carrots, scallions, green peas and mix. add in your spices: salt, black pepper, crushed pepper (to taste), turmeric and curry powder. once everything is mixed, turn the stove off and mix in the mashed potatoes.

take your banana peppers and a small spoon and start to stuff your peppers with the potato mixture. once they’re all stuffed, coat your air fryer with avo oil and air fry for 15 mins on 325°F.

for a tastier option: coat the peppers with batter (flour mixed w water) and bread crumbs and fry them in avo oil and serve 😋👩🏽‍🍳
