How incredible we are as humans. We are capable of rocketing to the moon and travelling deep into the depths of the ocean. We can mimic birds and fly across the world in less than a day. We can mold and create bodies that can leap, jump and run that it tests all limits of body. So I sit here and wonder if we are capable of so much, what can we do to lift each other up and strive to be examples to one another to be the best we can be? The media focuses on so much negativity. But that’s not what we are. Let’s break out of our thought process and our bodies and do something different today. Step into the realm of pushing ourselves to be kinder. To be more empathetic. To create bonds with people so we can learn. Pick up a new skill. Watch or read a book.

What would you guys want to do better? I think as a person I would love to be more persistent and patient. And as a skill I’d love to learn to make videos and create incredible posters.

Strawberry rhubarb chia pot:
2 T of chia seeds.
3/4 cup of oat milk.
2 T of coconut yogurt.
1 T of maple syrup or agave.
1 tsp of vanilla powder.

In a jar, mix all the ingredients together except the yogurt. Place a tight fitting lid on the jar and shake your chia pudding a few times in the first hour. Let it sit in your fridge until ready to serve. When ready, scoop some yogurt into the mixture and mix well. I placed 2 T of oats to thicken it up a little!

Strawberry rhubarb compote:
– dice up on stalk of rhubarb.
– dice up 2 cups of strawberries. – place ingredients in a pot with 1-2 T of maple syrup. Simmer on low for 20 minutes. Let it cool.

Layer your jar with jam, yogurt and chia pudding. Top with home made granola, arils and strawberries. .
