Sticky sriracha tofu

Actually cooked something new from scratch for once rather than eating out or cooking the same few recipes over and over again. Saw a mob kitchen recipe for sticky sriracha Quorn and veganised it by swapping the Quorn for tofu and the honey in the glaze for maple syrup.

Sliced a block of cauldron form tofu onto 4 even slabs and fried in a little cooking spray for a couple minutes each side. Made a glaze with 2tbsp sriracha, 1tbsp maple syrup, 2tbsp powdered ginger, 1tbsp soy sauce, 1/2tbsp vegetable oil, 1tbsp cornflour, and 4tbs water. Added the glaze to the pan and cooked for another few minutes. Served with some boiled rice and lightly fried pak choi, garnished with spring onions, sesame seeds, and a little splash of lime juice.

Had some @yutakaeats veg gyoza as a side with a dipping sauce 1 part rice vinegar, 1 part sesame oil, and 1 part soy sauce.
