STEAMED POTATOES WITH FRESH PARSLEY & CUCUMBER NOODLE SALAD
I am obsessed with potatoes 😅
Who else has or could have potatoes every day?
1 kg potatoes, peeled and diced
1 cup fresh parsley, roughly chopped
2 garlic cloves, minced
1 cucumber, noodles
1-2 tomato, sliced
1 broccoli, florets
1/2 cup alfalfa sprouts
1 fresh chilli, finely chopped (optional)
1/2 lemon, juice
First steam the potatoes – add water to medium-sized pot, bring it to a boil and add a steaming basket. Place the potatoes in the basket, cover and steam for a total of 15-20 minutes, until soft. When it’s all cooked and soft, remove and cool completely.⠀⠀
Now place a medium size pan onto medium heat, add 2 tbsp of water and the broccoli to the pan and fry for few minutes (no oil).
Rinse all vegetables and cut into shapes as listed in ingredients section.
Place all vegetables for the salad in a big bowl and add the lemon juice, give it a good mix.
Add the fresh parsley and garlic to the potatoes and toss it well.
Transfer the salad and the potatoes onto a plate or bowl.
Sprinkle some love on top, take a deep breath and enjoy ✨🌻
