SRI LANKAN COCONUT LENTIL AND SPINACH DAHL ?

served with roasted tomatoes in coconut oil and cumin seeds, extra chilli, coriander and some nigella seeds

one of my all time faveeeeeee recipes and so comforting!!! I’ve posted it way before and it’s featured on my stories but it’s actually a @goustocooking recipe which I’ve slightly tweaked (normally it is served with an aubergine pickle but I fancied switching it up this time)

but ingredients + recipe is as follows –

– 1 clove of garlic minced
– 1/2 red onion, finely diced
– 1/2 tbsp medium curry powder
– 1 tsp turmeric powder
– 100g red lentils
– 400ml light coconut milk
– 1 vegetable stock cube , dissolved in 200ml water
– handful of spinach leaves

method;
– combine coconut milk with vegetable stock (~ 600 ml of liquid in total)
– fry off spices in a bit of oil with 1 clove of garlic, then add in lentils and fry for another minute
– add in the coconut stock and bring up to the boil, then simmer gently
– once lentils are cooked (approx after 20 mins or so), add in ya spinach

SO tasty, versatile and quick to whip up !! And you can add in any veggies you want ????? I’ve just had it for my office lunch too today ☺️
