Squash leaves stir fry. Day to day Indian Cooking is based on approximations. You don’t measure all the ingredients to start with cooking. My Aai/ Nani Maa/ Grand mother virtually instructed me this recipe.
💥take handful of yellow split mung beans and roast it.
💥add a cup of chopped ridge gourd and a cup of chopped squash
💥mix it and add a cup of water and let it boil.
💥once the lentil is cooked, add chopped squash leaves along with grated coconut.
💥cook it until the leaves become tender
💥add salt as per taste.
For tempering
💥heat a pan and 1 tablespoon of oil to it. Next add mustard seeds and a red chili. Let them dance a little bit and then add it to the stir fry. Serve it hot with Pakhala Bhata.
