Spooky Green Pasta:

spooky green pasta:

(gluten free, high protein, can be made vegan+dairy free)

6 oz baby spinach or as much as you like
1 cup fresh basil
box of gluten free pasta (I recommend a bean, lentil pasta and I’m using chickpea pasta- @eatbanza )
2 cloves garlic
1/3 cup cup extra virgin olive oil
1/4 tsp red pepper flakes
1/2 cup dairy free cheese (Parmesan or mozzarella)
1.5 tbsp lemon juice

– bring large pot of salted water to a boil and prepare a large bowl with ice and cold water
– add spinach and basil to boiling water for 30 seconds and transfer with tongs to ice bath
– keep the water boiling and add your pasta
– meanwhile heat olive oil in a pan over low-medium heat and add sliced garlic and red pepper flakes stirring occasionally making sure it doesn’t burn
– to make the sauce add the blanched spinach and basil, sautéed garlic and olive oil, Parmesan cheese, lemon juice and good amount of salt+pepper
– blend until completely smooth
– drain pasta (saving some pasta water) and add sauce onto pasta as well as a few teaspoons of pasta water
– cut up olives and mozzarella and make little eyes on your pasta
– enjoy!
