Spinach & Sweet Potato Croquettes

Spinach & Sweet potato croquettes

✅gluten free, vegan, dairy free, sugar free, low fodmap/ gut friendly.

Ingredients:
– 1 sweet potato
– 100gr of baby spinach
– 50 gr of vegan mozzarella cheese @wholefoodsuk
– 4 tablespoons of Gluten free flour
– 2 tbsp of vegan cream cheese ; I use Chives flavour @wholefoodsuk
– 1 tsp of nutmeg
– 1 tsp of garam massala
– sea salt and black pepper
– 2 tbsp of olive oil

🌱Above ingredients will give you enough for 18 croquettes

👉🏼Steam your sweet potato on salted water
👉🏼Add all the other ingredients into a bowl
👉🏼Once your potato is soft, drain and mash and add to the bowl
👉🏼Mix all the ingredients well until they have a mash consistency and adjust seasoning
👉🏼Shape your croquettes – I do mine roundish. The mixture is wet enough to hold it self so does not need flour or breadcrumbs
👉🏼Cook them in a hot pan with olive oil
👉🏼Soak them in some kitchen roll to remove the excess oil and place in a serving plate and enjoy !
✅They can be eaten hot or cold and will keep in the fridge 3-4 days and are also be freezable .
