🌱SPINACH PASTA WITH ZUCCHINI-NUT SAUCE from @veganreset COOKBOOK. 🌱This is an awesome book to keep on hand right now. It’s filled with practical recipes that are so yummy and 😋pantry friendly. It is available on Amazon and viewed as an essential quarantine item as delivery is quick! One of the recipes I really love is this pasta with blended zucchini in the sauce. You’d never know that it’s there! My kids love it…..
✅Recipe: You need: ✅Pasta: 6 ounces dried regular or gluten-free fettuccine or any pasta, 4 cups baby spinach, ½ cup grape tomatoes (halved), pinch of ground black pepper. ✅Sauce: 1 cup water, ½ cup white almonds (soaked) or ¾ cup sliced almonds, ½ small zucchini (peeled or unpeeled), ¼ cup pine nuts, juice 1 lime, 1 or 2 garlic cloves (peeled), 1 tbsp onion flakes, 2 tsp cornstarch, 1 tsp grated nutmeg, ½ tsp sea salt. ✅Method: 1. Bring a pot of water to a boil and cook the pasta according to the package instructions. 2. Meanwhile, blend all of the sauce ingredients in a blender until smooth. Transfer to a pot and cook the sauce over high heat for 2 minutes. Stir with a whisk and add ½ cup more water while cooking. 3. Reduce the heat to low and add the spinach to the sauce, then cook for 2 more minutes. 4. Serve the pasta with the sauce, tomatoes, and pepper.
