These quesadillas are made with tortillas stuffed with vegan cheese (1/3 cup), sauteed spinach (one large handful, cooked with a touch of oil), 1/4 cup chopped kalamata olives, and 1/4 cup chopped sun-dried tomatoes. This amount of filling is enough for 2 quesadillas (or 1 super stuffed quesadilla ? like this one). In a large skillet, add a touch of oil and one tortilla (medium heat) then arrange the ingredients across the tortilla. Lay a second tortilla over it. Cook until bottom is lightly golden brown, then very carefully flip with a spatula and cook another minute or two until the cheese is melted and the second tortilla is crispy??
