Spicy Roasted Capsicum + Lentil Bolognese ?

Bolognese sauce Ingredients (serves 2-3)
– 1 large red capsicum
– 1 large tomato
– 1/2 medium red onion
– 1 tbls garlic (minced/flakes)
– 2 tbls olive oil
– 1/3 cup plant milk (unsweetened)
– 1/8 cup sriracha (or any other hot sauce)
– 1 can lentils

Roughly chop capsicum, tomato + onion into large pieces. Put them on a tray with oil and garlic and mix to make sure everything is coated, roast for 30 mins at 200°c.

Once cool blend in a food processor or blender, roasted vegetables with plant milk and sriracha until smooth.
Then heat in a pan with lentils for a few minutes and serve with your favourite pasta. I just use a wholemeal spiral pasta.
