Spicy Red Lentil Pasta

Pasta is one of my favourite meals, it’s honestly so quick and easy but yet tastes absolutely delicious!! I love to try new pasta sauce recipes and this was one I made last night and I was really happy with how it turned out!!

Makes 2-4 servings 🙂
– 1/2 cup red lentils
– 1/2 tbsp olive oil
– 1/2 onion
– 3 garlic cloves
– 2 cups of mushrooms
– 3 cups kale
– 1 carrot, shredded
– 1 tomato, diced
– 1/2 tbsp olive oil
– 2 tbsp tomato paste
– 450g tomato passata
– chilli flakes, to taste
– 1 tbsp basil
– 1 tbsp oregano
– 1 pinch salt

1. Cook the lentils in boiling water for 15 to 20 minutes, then drain
2. While the lentils are cooking, heat up olive oil and sauté onion and garlic for 5 min
3. Add the mushrooms and sauté for another 3 mins (or until they’ve reduced in size)
4. Add the tomato and carrot and sauté for another 3 mins
5. Add the passata, tomato paste, pinch of sea salt, chilli flakes, oregano and basil, then simmer for 5-10 minutes
6. Stir in the cooked lentils to the pasta sauce
7. Cook your preferred pasta until al dente, reserve some pasta water before draining then add both to the sauce
