Spicy Chickpea Cheese Toasties by @nadiashealthykitchen

Ingredients (serves 2):
1 can chickpeas, drained and rinsed
1 small garlic clove, crushed
1 tsp coconut oil
½ tsp chilli
1 tsp cumin
1 tsp turmeric
1 tsp paprika
Juice of 1 lemon
slat & pepper to taste
Handful of shredded vegan cheese
4 slices of bread
Heat 1 tsp of coconut oil in a frying pan over a medium/low heat.
Add the garlic and chickpeas and cook for a couple of minutes.
Mix in the spices, lemon juice and season with salt and pepper. Cook for another 2-3 minutes.
Brush both side of the bread with some melted butter. Sprinkle some shredded cheese and top with the chickpeas. Sprinkle some more cheese then place the other slice of bread on top and press down.
You can either cook these in a preheated grill for a few minutes or using a hot grill pan and cook on each side for 2-3 minutes. Enjoy!
