Spicy Bean Breakfast Recipe πŸ‘‡

I’ve been using black beans a lot recently in my cooking, I just can’t get enough of them!! I went on holiday to Nicaragua a few years back and fell in love with them there, now when I have them I think of that amazing country – one day I’ll go back 😍

Anyway, this recipe is super easy and quick, and makes a couple of servings so you can keep it in the fridge for breakfast the next day if it’s just you πŸ‘

Ingredients

πŸ’š1 tin of black beans, drained and rinsed
πŸ’š1 tin of chopped tomatoes
πŸ’š1 tsp cumin
πŸ’š1 tsp smoked paprika
πŸ’š1/4 tsp chilli powder
πŸ’š2 tsp mixed herbs
πŸ’ša large handful of chopped spinach
πŸ’š1/2 cup coriander/cilantro plus more to garnish
πŸ’šsalt and pepper to taste

πŸ’ša lovely chunky slice of fresh bread, I used sourdough here and it was perfect

🌿throw the beans, tomatoes, herbs and spices in a pan over a medium/low heat, and heat through for about 5 minutes
🌿Add in the spinach and cook for a couple of minutes until wilted then add in the coriander, salt, and pepper.
🌿 give it all a good stir then serve up on the bread – simple 😁
