Spicy and smoked RED BEAN CHILI! A classic and heartwarming dish to keep you warm and cozy ? GLUTEN-FREE, SOY-FREE, NUT-FREE and OIL-FREE option!

Ingredients:
1 onion, chopped
2 medium carrots, chopped
1 red bell pepper, chopped
2 cans red beans
1/2 tsp garlic powder
1 tsp smoked paprika
1/2 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp red pepper flakes (optional)
1 bay leaf
2 tbsp tomato paste
2 tbsp potato starch or cornstarch
Salt and pepper
About 3 cups water

Add chopped onions to a hot pan over medium heat and sauté until translucent, in a splash of water or oil. Add the chopped carrots and red pepper to the pan and sauté for a few more minutes. Add spices, including the bay leaf, salt and pepper, and continue to fry for another minute. Add the tomato paste and water and let it simmer on medium heat with the lid on, until the vegetables have softened. Do not add all the water at once, add only enough to cook the vegetables and have a bit of sauce. Finally, add also the cooked red beans, stir together and let it simmer for a few minutes to combine. In a separate bowl, add potato starch and a splash of water and stir until the starch has incorporated, them pour the mixture into the chili. Start with one tbsp of potato starch first and if needed, then add another tbsp to reach the desired thickness. Sprinkle some fresh parsley and plant yoghurt and enjoy ?
