Spiced Sweet Potatoes with Tangy Cucumber, Sumac Salsa, & Whipped Garlic Tahini by @legallyplantbased 🍠 Such a delicious combo! Recipe below:

Sweet potatoes:⁣
4 small sweet potatoes, pealed and halved, 1/2 tsp red pepper flakes, 1/2 tsp paprika powder, 1/2 tsp onion powder, 1/2 tsp garlic powder, salt & pepper to taste, (optional 1/2 tbsp olive oil) Method: Coat the potatoes in the seasoning and air fry or bake for 20-25 minutes at 400F/200C (flipping half way)⁣

Cucumber & Sumac Salsa (mix following ingredients in a bowl):⁣
1/2 English cucumber finely chopped, 1/2 red onion finely chopped, 1/2 lemon juiced, 1 tsp sumac, 1 tsp dried mint, salt to taste, (optional 1/2 tbsp olive oil)⁣

Garlic Tahini:⁣
2 tbsp runny tahini, 2 1/2 tbsp water, 1/2 tbsp lemon juice, 1 garlic clove minced, salt to taste. Method: Whisk together all ingredients in a small bowl until smooth and creamy.⁣

Place potostoes on a plate, top with the salad, drizzle with the garlic tahini and top with some fresh tarragon & red pepper flakes. Ready to serve!⁣
