Speedy lentil & quinoa stir fry with a tahini yoghurt drizzle 🥙 in this stir fry I also chucked in some chickpeas and @eat_oumph kebab pieces which worked a treaaat 🤩 all whipped up in 10 mins 🤪 apologies for the slight lack of presentation: I’d like to say the drizzle was done in true Jackson pollock fashion (did u know I now study art history wow !)

🥙 speedy lentil and quinoa stir fry 🥙 serves 1
• 1/2 pack of @merchantgourmet Persian lentils and quinoa • 1/4 can of chickpeas • 75g @eat_oumph kebab pieces • 100g spinach • 100g mushrooms • 1/2 red onion • juice 1/4 lemon • 1/2tsp smoked paprika •

For the tahini drizzle: 3 heaped tbsp yoghurt • 1 tbsp tahini • juice 1/4 lemon • salt and garlic granules •

– fry the onions, mushrooms, chickpeas and kebab pieces in some oil with the smoked paprika till cooked
– now stir in the rest of the veg along with the lentils and quinoa and cook for 1 more mine till slightly wilted
– meanwhile, mix all ingredients for the tahini drizzle together in a bowl and set aside
– squeeze in the lemon juice, season and serve with the tahini drizzled over top 🥰
