Are you a fan of one-pot recipes? ?‍♀️ I have the ultimate one-pot Spanish vegetable stew recipe for you! ? This stew is bursting with wholesome veggies, bold Mediterranean flavours and sweet tomatoes. The flavourful saffron broth makes it the ultimate Spanish comfort food! This stew is gluten-free and incredibly quick and easy to prepare! Serve it with a side of fresh crusty bread for a hearty and delicious vegan lunch or dinner!

Ingredients (Serves 4-5):
-3-4 tbsp olive oil
– One small 700g butternut squash (seeds taken out and cut into small chunks with the skin on)
-350g salad potatoes, halved
-3 celery sticks (finely chopped)
-1 red, green and yellow bell pepper (roughly chopped)
-1 large red onion (sliced)
-5 cloves garlic (minced)
-1 can chopped tomatoes
-1 400g chickpeas, drained
-600ml veg stock @knorr
-15g parsley (roughly chopped)
-1/4 tsp saffron
-1 tsp garlic powder
-1 bay leaf
-1/2 tsp black pepper
-1.5 tsp sea salt, to taste
-2 tsp sweet smoked paprika
-1/4 tsp cayenne pepper
-60g pitted black olives (halved)

Method:
-Heat the olive oil in a large pot and add the butternut squash and potatoes . Fry over a medium heat for 5-7 mins

-Add the peppers, celery and onion and saute for 5 more minutes until the peppers and onions start to caramelize. Add the garlic and cook for 2 more mins, stirring occasionally.

-Stir in all of the herbs and spices, tomatoes and chickpeas, then pour the hot vegetable stock into the pot. Cover with a lid and simmer on a medium heat for 35-40 mins until the vegetables have softened. Scatter over the olives and a small handful fresh parsley and serve!
