Spaghetti with lemon-garlic cream. This cream is nice and garlicky with a lemon tang and the best thing is it doesn’t require any cooking. After mixing the ingredients in a blender, just stir it through warm, cooked pasta and then serve topped with vegan parmesan and chopped chives. You can change the quantity of garlic lemon or salt to suit your taste??

Lemon garlic cream
1 cup cashews soaked and drained
1/4 cup warm water
2 cloves garlic minced
Juice of 1 medium lemon
1/4 tsp sea salt

Add all ingredients to a blender and blend to a cream consistency (no graininess). A food processor won’t give you that same creaminess.
Add the cream to warm cooked pasta or zoodles and stir through.
Serve in a bowl and sprinkle with vegan parmesan and chopped chives ??
