Ingredients:
10 oz gluten-free spaghetti
1 tbsp olive oil (sub water for oil-free)
3 cloves garlic, minced
1 medium red onion, chopped
1 cup fresh tomatoes, chopped
1 tsp salt
2 tsp dry basil
1 can black beans, drained and rinsed

Method:
Cook the spaghetti according to packaging instructions. Meanwhile, heat the olive oil in a skillet and add the garlic, sautéing for 2-3 minutes, until fragrant. Next, add the onion and tomatoes and cook for a further 5 minutes, until softened. Season with salt and add the dry basil together with the black beans, stirring well to combine. Drain the pasta, but retain 1/4 cup of the pasta water, adding both to the skillet. Toss together using kitchen tongs and serve.
