Sour Dough Bread with a side of Butternut Squash Soup
I ended up with another butternut squash in my @misfitsmarket box this week. Which means I had to get a little creative. Check out the recipe below!
Ingredients
• 1 Butternut Squash (peeled & cubed)
• 1 Fennel (sliced)
• Handful of baby potatoes or 1 medium ?(diced)
• 1 small ?(cut into large chunks)
• 3 garlic cloves (peeled)
• 1-2 TBS of Olive Oil
• 1 vegetable bouillon cube
• 2-3 cups of water
• Splash of soy sauce
• 1 TBS of miso paste
Recipe
• Toss the butternut squash, fennel, potatoes, onion, and garlic with the olive oil and a sprinkle of salt and pepper
• Evenly spread out the veggies on a sheet tray and roast at 375 degrees for about an hour, tossing them around half way through
• Combine the rest of the ingredients and the roasted veggies into a bowl and blend using an immersion blender or blend in a blender
• Enjoy with some slices of fresh sour dough bread ?
