🥣 Soup Season Is Upon Us And Pea Soup Is One Of My Favour

🥣 Soup season is upon us and pea soup is one of my favourites as it is inexpensive and requires few ingredients. It is hearty, nutritious, delicious and super easy to make! Recipe can be doubled and freezes well. ⠀

🌱Vegan & gluten free, can be made oil-free as well. Makes approximately 4 servings. ⠀

Ingredients:⠀
•4 cups veg broth ⠀
•1 cup dry yellow or green split peas ⠀
•2 carrots minced⠀
•2 celery stalks minced ⠀
•1 onion chopped ⠀
•2 garlic gloves minced
•1/2 tsp salt or to taste ⠀
•1/2 tsp pepper or to taste ⠀
•1/2 tsp cumin ⠀
•1/2 tsp turmeric ⠀
•1/2 tsp garlic powder⠀
•1/2 tsp onion powder ⠀
•1 Tablespoon olive or other oil (Sub with double amount of water or broth for oil free)⠀
•1 tsp @spiceworldwpg Peg City seasoning (optional) ⠀
•1/2 cup Plant Power Jerky minced (Original or Peg City recommended) ⠀
•handful of spinach or kale torn or chopped (optional) ⠀

Method:⠀
1. Rinse peas very well until water is clear ⠀
2. Chop all veggies, garlic and jerky ⠀
3. Add oil to medium to large pot set to low-medium heat, add garlic and onion, sauté until translucent about 3-5 minutes ⠀
4. Add carrot, celery, spices cook for 3-5 minutes until slightly softened ⠀
5. Pour in vegetable broth and add peas⠀
6. Turn up heat and bring to a boil then lower to a simmer⠀
7. Simmer for an hour or so, adding more broth if needed until peas are very soft and falling apart ⠀
8. Add greens if using and stir ⠀
9. Let cool and blend all or half if desired (optional) ⠀
10. Top with minced jerky right before serving and enjoy!
