This vegetable soup is so easy to make and often requested by my 9 year old son.💚

Ingredients:
2 tbsp olive oil 🫒
1 medium white onion, diced 🧅
4 carrots, diced 🥕
3 cloves of garlic , minced 🧄
3 Roma tomatoes, diced
🍅
3 celery stalks, diced
2 cups of frozen white corn 🌽
2 medium potatoes pealed and diced 🥔
5 cups of water 💧
Salt and pepper to taste

Preparation:
Heat oil in a large pot over medium heat.
Add onion, garlic and a teaspoon of kosher salt and cook for about 5 minutes.
Add all vegetables and cook for 5 minutes stirring often.
Add water and pepper, bring to a boil, reduce heat to low cover and simmer until veggies are tender, about 30 minutes.
Remove from heat , serve and enjoy!
