Soooo motherhood has been kicking my bum….we’re going through a tough “I don’t want to sleep” stage. So I’m trying to prep as much as possible and come up with speedy, but healthy meals.

This is a Creamy, basil and spinach pasta and only takes 20 minutes! This was a post workout meal 💪💚

Ingredients
* 3 tsp olive oil
* 1 white onion, diced
* 2 garlic cloves, minced
* 1 tbsp white wine vinegar
* 210g Silken Tofu
* 130g baby spinach
* small bunch of basil
* 2 tbsp nutritional yeast
* 160g dried tagliatelle
* 20g vegan parmesan
* salt and pepper to season

Method
* Heat the oil in a frying pan and cook the onions and garlic until onions have softened.
*Meanwhile bring a pan of water to the boil and cook the pasta as per package instructions (Normally 9 mins)
*Add the white wine vinegar and 100ml boiling water and simmer for a couple of minutes.
*Add the Silken Tofu, all but a handful of baby spinach, basil, nutritional yeast and the onions and garlic to a blender/liquidiser. Blend until smooth.
*Drain the pasta over the remaining spinach, then return to the pan.
*Pour over the green sauce, and mix well through the pasta. Return to low heat for a few minutes. Season with salt and pepper.
* Serve topped with 10g vegan parmesan.
