Somebody told me that vegan food was soulless. LIES!!! Chiii…if you know what you’re doing and call on the spirits of your ancestors to come swirl around in them pots, all of your plant based dishes will be full of flavor and soul. Lemme help y’all hoes out with 2 soul food staples:

Soulful Vegan Collard Greens
2 bags of prewashed collard greens (don’t get excited by the word “prewashed”. Y’all still need to wash them a few times to make sure there’s no sand or bugs in them. If you like bugs, then the greens will not be vegan. ?)
Around 24 ounces of vegetable stock
5 minced garlic cloves
1 tablespoon + 1 teaspoon liquid smoke
3 tablespoons liquid aminos (or soy sauce)
1/4 cup vinegar (I used red wine vinegar)
1 tablespoon onion powder
1 teaspoon garlic powder
1 teaspoon Trader Joe’s Vegan Chickenless seasoning salt
1 packet sazon
1 tablespoon white pepper
Crushed red pepper flakes to taste (optional for y’all…required for me!)

After you have thouroughly cleaned your greens and removed any excess stems, add them to a large pot. Add the vegetable stock and all of your other ingredients to the pot and stir together. Bring greens to a boil on top of the stove over high heat. Stir together one more time before covering and reducing the heat to low heat (around 2, if your heat settings are numbered). Simmer for around 4 to 5 hours until tender, checking periodically. If your liquid gets too low while cooking, just add more vegetable stock or some water.

Vegan Cornbread
1 cup yellow cornmeal
1 cup all purpose flour
1/2 cup granulated sugar
1 teaspoon salt
1 tablespoon baking powder
1/3 cup of vegetable or canola oil
1 cup of unsweetened plain plant milk (I used soy)
(Optional – 1 large diced and seeded jalapeno and 1/2 cup shredded vegan cheddar cheese)

Preheat oven to 400 degrees. In a large bowl, combine all of your dry ingredients and whisk together. Next, add your milk and oil (and optional ingredients) and mix until combined. DO NOT overmix! Grease an 8×8 square pan and add cornbread batter. Bake for 30 to 35 minutes.
