So many requests from you lovely bunch for these after sharing them on my stories yesterday ❤️ miso roasted new potatoes 🥔 I forgot just how good miso was and am now going to add it to anything and everything for the foreseeable future. Maybe not porridge 😏Roast up a batch and serve over the course of a couple of nights with your favourite veggies, legumes or even tofu🍴I served mine alongside some tahini also as I think the flavours go together beautifully 🙌🏼 recipe as follows:
▪️INGREDIENTS
750g new potatoes
2 tablespoons of miso paste
1 tablespoon of rice vinegar
1 teaspoon of garlic granules or 1 clove crushed
Tahini to serve
Salt to season
▪️METHOD
1. Boil the new potatoes in a saucepan of water on a high heat for 15 minutes or until soft.
2. Preheat oven to 180c and now drain the potatoes.
3. Scatter them on a baking tray and using a mashed or fork gently smash them so they break.
4. In a bowl combine the miso paste, rice vinegar and garlic. Brush the mixture on the potatoes and place in the oven for approximately 30 minutes until nice and crispy.
5. Serve with tahini and season with salt. enjoy!
