So excited about all things pumpkin! Eating fresh, seasonal, local, organic produce is a great way to boost your intake of diverse minerals, plus it protects soil health! In particular, pumpkin is high in vitamin A, beta carotene, lycopene and it can protect the body against type 2 diabetes. Pumpkin seeds are high in zinc, which boosts digestion and supports thyroid health. I baked this pumpkin into a delicious pumpkin banana bread! It’s high in fiber, healthy fats, protein, and low in sugar. It’s also gluten and dairy free. If you try this recipe, let me know how it goes! This is adapted from Amy Chaplin’s At Home in the Whole Foods Kitchen.

Cacao swirl topping:
1 Tbsp cacao powder
1 cup pumpkin batter

Pumpkin batter:
2 cups pureed pumpkin (i used freshly roasted pumpkin!)
2 medium bananas (more if you like it a little sweeter)
1/4 cup cold pressed olive oil
2 Tbsp local honey
1 Tbsp lemon juice
1 tsp vanilla
4 pasture raised eggs, whisked

1 cup Renewal Mills gluten free flour
1 cup garbanzo flour
1/2 coconut flour
1 tsp baking soda
1 dash unrefined sea salt

Instructions: preheat the oven to 350 degrees F and grease the bottom of a 9×12 baking pan with coconut oil. sift the dry ingredients together in a bowl and set aside. Mix the wet ingredients in a separate bowl. Fold the wet into the dry. Pour 1 cup of the batter into a separate bowl and add the cacao. Pour the pumpkin batter into the baking pan, and add the caco layer on top. Use a knife to make the swirl pattern on the top. Bake for 45ish minutes, or until a knife comes out clean. Let cool and enjoy!

If you don’t want to use the eggs, add 1 Tbsp of flax meal and increase the liquid by about a cup. The eggs are in there to increase the bioavailability of the vitamin A.
