Smokey Butternut Squash Wraps!

Smokey butternut squash wraps!

Squash mix ingredients:
》1 tbsp olive oil
》3 cups cubed butternut squash
》1 yellow onion – chopped
》1 can chickpeas
》1 tsp smoked paprika
》1/4 tsp cayenne pepper
》1/4 tsp ground sage
》1/4 tsp ground thyme
》salt/pepper to taste

Pea shoot mix:
》1 lemon
》1 tbsp olive oil
》1/2 tbsp red wine vinager
》salt/pepper to taste
》1 cup pea shoots

Directions:
1. Bring pot of water to a boil, reduce to medium heat and add butternut squash. Cook for 5 mins, then drain
2. Heat olive oil to pan over medium heat – when hot, add squash and cook 5 mins
3. Add onion to the pan and cook down 3-4 mins
4. Add chickpeas and all spices to the pan – cook additional 3-5 mins
5. While squash mix finishes, in a bowl, whisk together the lemon, olive oil, vinegar, and salt/pepper
6. Time to build the wrap! Add a generous portion of hummus to your wrap, layer on the squash mix, then dip the pea shoots in the whisked together liquid and top your wrap with the greens
7. Carefully roll up your wrap and enjoy 🙂
