? Smoked Garlic Chili

What’s the weather doing in your part of the world? I developed this recipe with all my Australian friends in mind as the weather is starting to get super cold! It’s the perfect healthy lazy winter meal.

Ingredients (serves 4)

1 Cup Red Kidney Beans (cooked, washed and rinsed)
1 Cup Cannellini Beans (cooked, washed and rinsed)
½ Cup Jalapeños
1 Cup Corn Kernels
1 Onion (roughly diced)
2 Stalks Celery (sliced)
1 Green Capsicum (roughly diced)
2 Carrots (diced large)
3 Smoked Garlic Cloves (chopped finely, sub normal garlic)
1 Avocado (sliced)
1 ½ Tsp Cumin
1 Tsp Thyme
1 Tbsp Chili Powder (sub paprika to reduce heat)
Organic Corn Chips (optional)
½ Cup Coriander to garnish (optional)

Directions

1. In a slow cooked add the tinned whole tomatoes including the juice and crush using a kitchen utensil.

2. Add the legumes, jalapenos, corn, onion, celery, capsicum, carrots, garlic, cumin, thyme and chili powder. Mix well.

3. Cook on high for approximately 6hrs depending on the slow cooker. If you are doing this on a stove top reach a boil then reduce to a simmer for 1-2hrs occasionally stirring.

4. Garnish with avocado and coriander, serve with a bowl of corn chips or quinoa.
