Smashed avocado bagel

Simple yet delicious

Ingredients
1. 1 Medium sized ripe avocado
2. 1 vine ripened tomato
3. 2 spring onions
4. Salt and pepper
5. Lemon juice
6. Bread of choice, toasted

Method
1. In a bowl put your avocado, a splash of lemon juice and salt and pepper to taste. With a fork mix and press the avocado mix to get a nice smooth consistency
2. On a toasted piece of bread (I went for a bagel) add the smashed avocado
3. On top add sliced tomato and sliced spring onion
4. Add another sprinkle of crushed salt and pepper
5. I added sriracha mayonnaise on top
