Simple vegan dinner tonight: pasta and roasted red pepper sauce ?
I cooked a batch of the sauce yesterday, just reheated it and cooked some fresh pasta with it and voilà: quick and easy dinner for hungover Sundays!

3 cloves of garlic
2 red peppers
1 tbsp olive oil
1/2 cup plant based milk
3.5 tbsp cashew butter
2 tbsp tomato paste
3-4 tbsp nutritional yeast
Red pepper or chili flakes to taste
Preheat oven to 220 degrees. Peel and quarter onion, peel garlic cloves and cut peppers into large pieces. Spread on lined baking sheet, cover in olive oil and roast in oven for 20 minutes. Meanwhile cook your pasta and add remaining ingredients to a blender, then add roasted veg and blend until smooth. Transfer sauce to skillet and bring to a boil, then cook until desired consistency is reached. Enjoy and melt away ?
