@abbioccooo in-house recipe: Vegan spicy carrot curry served with grilled tofu/rice

🍽: Carrot curry with grilled tofu
🍴: serves 3 portions
🌱: Vegan

Recipe as follows ⬇️

Utensils required
– food blender
– Non stick pan

Ingredients required
– 1 medium tomato (seedless)
– 1 medium onion
– 1 peeled medium small carrot
– 5 cloves of garlic
– 1 green chilli
– 1/2tsp black pepper powder
– Salt as per taste
– 1tbsp olive oil
– 1tbsp water
– 70-80ml almond milk/coconut milk
– 100 tofu/rice

Process
– Start by blending in all the veggies together to form a paste (add some water for blending it perfectly)
– Heat a non stick pan at medium heat & add olive oil to it.
– Add all the paste to the pan then slowly add the almond milk/coconut milk after a minute. Mix well.
– Add salt & pepper in the gravy & let it simmer for 5 minutes at low heat (cover with lid)
– Serve the curry with grilled tofu or rice (Grill the tofu on a griller with some olive oil brushes on it)
