๐ฎ๐น Sicilian caponata with Italian bread and rocket
This is my entry for #livxjuliaveganuaryworldtour European week ๐๐ so itโs been a quieter week for our cooking challenge – I know I for one have been super busy and tired this week so defo fancied making something simpler and cosier.
But donโt be mistaken because this was absolutely GLORIOUS!! I first had caponata when my brother and his gf made it for me a couple of years ago, and have cooked it/eaten it out since then but itโs never been as yummy as it was that first time!! I managed to get the recipe Joe and Trish used and itโs one by @seriouseats .
For those unfamiliar with caponata, itโs a Sicilian sweet and sour aubergine dish. The recipe describes it as โshockingly flavoursomeโ and it really is!! Itโs got an unbelievable amount of rich and intense ingredients that come together to create a complex, ridiculously tasty dish, including garlic, capers, cinnamon, raisins, pine nuts, tomato pureฬe, balsamic vinegar, red wine vinegar, mint, parsley and olive oil, as well as aubergine, red pepper and celery. I also added sundried tomatoes and olives for an extra intense Mediterranean flavour.
I served it with my fave bread ever – @crostamollica golden Italian bread, rocket, and of course balsamic vinegar and olive oil on the side ๐
This was such a hit with all of us – so easy and quick once youโve chopped everything! Will be having this again soon me thinks ๐
